Cuvée Les Brebis (2022)
This organic wine comes from a plot where our sheep provide winter pasture. Their presence is beneficial: it contributes to natural fertilization and limits soil maintenance operations.
V I N I F I C A T I O N
Harvest: hand-picking with optimal phenolic ripeness. The grapes are sorted twice, first manually in the vineyard, then on a sorting table in the winery.
Fermentation: 8 days. Very precise temperature control. Carbonic maceration. No sulfite. Indigenous yeasts.
Aging : Stainless steel tanks, without sulfite. very reasonable sulfiting at the bottling stage
Aging potential : 3-5 years

Color : Brilliant color with a deep red color (velvet) and purple reflections
Noise : Intense black fruit notes (blackberry, blueberry) with blackcurrant and licorice nuances. A rather open and flattering nose, quite typical however of the characteristics of the Juliénas appellation.
Palate: The attack is frank and the mouth presents a good freshness: a very appreciable characteristic for this solar vintage. The length in mouth is interesting and we find a sumptuous mixture of spices with hints of black fruits.
