Since 1928, the vines of Verquière have passed from father to son; today, Thibaut Chamfort leads their conversion to full organic and biodynamic certification. His Gigondas "En Dentelles" is farmed organically, although due to a clerical error in 2022, the certification was not permitted to appear on the label. The grapes are hand‑harvested with whole‑cluster Grenache and destemmed Syrah/Mourvèdre/Cinsault, fermented traditionally with gentle extractions, then aged for 14 months in a mixture of demi-muids and amphorae. Sulfite additions are kept to a minimum, with just 65 mg/L in the finished wine. The final wine is an expressive combination of soft fruit, delicate floral notes, and lingering spices. It is destined for elegant ageing over 5–10 years.
