Château de la Jaubertie Tradition Blanc

VINIFICATION The grapes are mechanically harvested early in the morning to avoid oxidation, then chilled and macerated during 3 hours. The juice is cold fermented and then left on the lees to intensify the flavors and richness on the palate. 15% is matured in old barrels for 4 months to add a little more complexity. TASTING NOTES Pale yellow color, citrus aromas. Good balance of fruit and freshness. Ideal as an aperitif, with shellfish or raw fish. Serve chilled.
