Chaume is a small, demarcated vineyard known for producing powerful, sweet Chenin-based wines with remarkable balance. The terroir is composed of schist and clay, and the grapes are harvested by hand in successive sortings. Alcoholic fermentation and ageing take place in wooden vats for 18 months.
